To cook a cotechino place the cotechino in some lightly salted cold water along with 6 bay leaves.

Then bring the salted cold water to a boil and then reduce it to a simmer and then allow it the cotechino to cook for 1 hour at simmer.

After the cotechini is cooked you can remove and drain the cotechino.

Then after draining and removing the cotechino you can slice the cotechino 1/2" thick.

And after you remove the casing of the cotechino you can serve the cotechino with some good mustard and mostarda di Cremona which is available at many Italian grocery stores and even specialty food shops.

Cotechino is a type of large Italian pork sauce that requires slow cooking and it's simmered at low heat for at least 1 hour although it can also be slow simmered longer.

The name Cotechino comes from cotica, although it can also take on different names, depending on it's various locations of production.

Cotechino is also traditionally served with mashed potatoes or lentils.
